All about diet food for pancreatitis: its features, useful recipes

The diet for chronic pancreatitis is not as terrible a restriction as it seems. Of course, in order for the pancreas to recover quickly and be healthy, you need to consider the specifics of the diet.

It is important to know when new dishes can be introduced and to keep in mind the prohibitions of gastroenterologists. But even from those products that are allowed, you can cook very tasty dishes and an endless variety of your table.

Diet food with pancreatitis

General principles of proper nutrition

The main task of the diet is the maximum relief of the pancreas. Fat and fiber are the hardest to absorb by the body. And the stomach finds it difficult to tolerate heavy, dry food. Based on this, the basic principles of the diet are simple and clear:

  • you must eat in small quantities, but often;
  • food must not be hot, cold, dry, hard;
  • in cooking fats, hot spices are excluded as much as possible;
  • frying, smoking, drying, canning methods are not used as product processing methods;
  • food should be freshly prepared, pureed or well chopped.

Each diet is limited to a specific list of foods. As you recover, the diet expands. These are the key moments of nutritional therapy. It is very important to properly return the products to the menu so as not to cross out the results achieved in the treatment and not to start again.

Therefore, the reaction to any product is checked: a small portion is tried first, and if the patient's condition has not worsened during the day, the dish will be reliably included in the menu next week.

Forbidden food

There are a number of foods that require the pancreas to secrete an increased amount of enzymes to process them:

  • fat, as well as varieties of meat and fish with a high fat content;
  • homemade milk, sour cream, butter, rich cheese and cheeses (especially smoked and processed);
  • chocolate, condensed milk and ice cream;
  • rich pastries;
  • all kinds of mushrooms and legumes;
  • nuts and seeds;
  • grapes, dates, figs;
  • all kinds of pepper (both salad and hot);
  • horseradish, garlic, onion (both green and onion);
  • sauerkraut (sorrel, lettuce, rhubarb, spinach);
  • white cabbage and radish.

Spicy sauces, vinegars, fats, mustard are excluded. Salt is used in limited quantities. Sugar is replaced by honey and xylitol.

Drinks must also be divided into what you can and what you can't. Of course, alcohol is completely unacceptable. Don’t drink sugary fizzy drinks. The effect on the health of coffee, even natural, is questionable. It is not recommended to take juices in stores because they may contain preservatives.

Food allowed

There remains a fairly extensive list of foods in the diet that are easily digestible and do not cause pancreatic problems. For example, a lot of flour products can be used:

  • rye bread (but stale);
  • black and white bread crackers (homemade);
  • drying;
  • biscuit biscuits;
  • diet bread (you can buy);
  • homemade noodles and vermicelli.

Oatmeal, rice, semolina, buckwheat porridge are cooked. Puddings, pans, cakes with baked apples and pears are made from low-fat cottage cheese.

Drinking during the recovery period can be not only healing, but also delicious. Allowed drinks:

  • herbal teas and special preparations of the pancreas;
  • decoctions of wild rose, black ash and currant;
  • dried fruit compotes and decoctions;
  • berry jelly;
  • vegetable juices;
  • chicory with milk.

Allowed 1% kefir and some dairy products for those who do not have gastritis with high acidity. You can mix a pinch of cinnamon and turmeric into the kefir. This is not only forbidden, but on the contrary - makes the drink a folk remedy for restoring gastric microflora.

White poultry and lean veal are also on the menu for pancreatitis. There are many types of fish that are dietary for pancreatitis. You can safely eat cod, navajo, blue crumb, river perch, perch and other species with a fat content of up to 4%.

Dishes can be seasoned:

  • flaxseed or olive oil, non-fat butter, refined vegetable oil;
  • dill and parsley;
  • cinnamon, coriander, cloves, turmeric, fennel;
  • sprinkle with sesame seeds.

Healthy vegetables provide plenty of room for dietary meals. Potatoes, carrots, beets, zucchini, pumpkins are used to make puree soups, stews, salads, and even medicinal juices. During the remission period, the menu is expanded with tomatoes, cucumbers, eggplants, cauliflower and other products.

Gentle and strict diet for pancreatitis

Gentle diet is called because it minimizes the efforts of the digestive system. All foods are selected for easier digestion. Carefully cook or steam and rub without leaving large chunks.

Thanks to all these manipulations, the pancreas does not have to secrete many enzymes, they do not "stagnate" in the ducts and do not corrode the tissues of the organs. And with insufficient secretion of the pancreas, excess food does not remain undigested, does not break down in the intestines, does not cause inflammation of the gastrointestinal tract.

How long must it be observed, how long does it last in the acute form?

In case of pancreatitis, the patient is immediately prescribed a post - the maximum possible saving regime for the pancreas. For a few days the body is cleansed of pancreatic toxins, fighting pain. Stopping the gastrointestinal tract allows it to "restart" its natural programs.

After an attack, a person's food is limited to a few meals that are prepared in small portions. A strict diet lasts for two weeks or more, depending on the severity of the attack.

The patient is then transferred to table number 5 and its variations. This is a longer diet than after the acute period, but still limited. It is observed for at least six months.

What should not be in the diet?

Each stage of pancreatitis clearly excludes alcoholic and carbonated beverages. You will have to forget about fast food, smoked meats, canned foods and marinades forever.

When buying food in stores, you must carefully read the information on the labels about the expiration date and composition. After all, allowed drying or croutons may contain unwanted additives (emulsifiers, powdered sugar, vanillin).

Strict adherence to the permitted product list takes six months or more. Even if the attacks no longer bother you. Furthermore, with the permission of the doctor, the products from the extended list are gradually tested.

Table No. 5 for pancreatitis

Table No. 5 is indicated for all types of pain in the epigastric region of the abdomen with nausea and vomiting:

  • with inflammation of the pancreas;
  • gastritis;
  • cholelithiasis;
  • hepatitis.

The menu does not include complex carbohydrates, ingredients that contain sugar, crude fiber and esters. The daily menu is built on the minimum required amount of important nutrients:

  • about 100 grams of protein;
  • 90 g fat;
  • 330 g of simple carbohydrates;
  • 1, 5 liters of free liquid.

Salt can be added to foods up to 10 grams per day.

The average daily energy index of food values is up to 2, 5 thousand kcal.

Depending on the individual indicators and the type of pancreatitis, the doctor prescribes a certain type of diet no. 5 (usually 5p or 5a).

Examples of recipes for therapeutic diet number 5

Diet food is easy to prepare. Some recipes take minimal time and effort, but are very helpful in restoring the pancreas:

  1. Cooked carrots are rubbed on a grater, crushed crackers are added. When the crackers soften and soak in the carrot juice, the mixture is rolled into chops and heated in the oven.
  2. Grind the cooked breasts in a blender with a little parsley. The balls are formed from minced meat and sprinkled with sesame seeds.
  3. Mix buckwheat and rice flour. Knead the dough in half in water with milk. Add a tablespoon of linseed oil and bake homemade diet bread in a slow cooker.
  4. The fish is steamed with boiled rice and juicy fish cakes are obtained.
  5. Low-fat cottage cheese is mixed with semolina, apple pieces are added and baked in a slow cooker. Sprinkle the finished pudding with cinnamon.

Rosehip decoction gives the green light in all stages of pancreatic disease. A few dried fruits are chopped, poured boiling water and insist in a thermos. The drink is drunk strained and slightly warm.

Diet number 5p is a classic table for pancreatitis. A balanced diet is specifically formulated to improve pancreatic function.

In diet number 5p, fats in permitted foods are strictly counted. The main meal consists of:

  • slimy cereal soups;
  • vegetable puree;
  • boiled beet and carrot salads;
  • baked apples without peel;
  • steamed egg whites;
  • steamed cutlets of twice minced chicken or turkey fillets.

In order to compensate for the necessary fats, oils are gradually added to the dishes: olive, flaxseed.

Food 5a is not much different from room 5p. The same restrictions for foods rich in fats, fiber and complex carbohydrates. There are two main differences in gastroenterology:

  • it is allowed to drink black tea with half a teaspoon of sugar;
  • should not eat 4-5 hours before bedtime; at best, dinner consists of 1% cup of kefir.

But nutritionists are convinced that Table 5a is good for treating a complex problem: pancreatitis, complicated by disorders of the liver and bile ducts.

Table 1 for chronic form

Table No. 1 is prescribed for chronic pancreatitis and gastritis in remission, some liver dysfunction. Unlike child number 5, the list of allowed foods and meals here is wider:

  • allowed to eat white bread, not too fresh (not hot, without "fried" crust);
  • of dairy products, sour cream with 15% fat, yoghurt, cheeses (except spicy, processed, smoked varieties) are acceptable;
  • porridge is cooked in milk (necessarily in the store, specially processed);
  • milk and a teaspoon of sugar are added to black tea (if there is no diabetes mellitus).

The most important difference between diet no. 1 and no. 5 in a less mild meal regimen. The products do not need to be kneaded and ground before use. You can eat cooked meat or vegetables in small pieces.

Proper nutrition for different types of pancreatitis

Inflammation of the pancreas comes in different stages and degrees. Depending on the period of the disease, it is chosen which diet is needed for pancreatitis:

  1. In the acute period, with exacerbation of chronic inflammation or in the case of reactive pancreatitis in a child, the first days should be fasted. All necessary nutrients are administered intravenously. When the danger passes and the syndrome stops, liquid foods (watery cereal purees and vegetable purees) are ingested through the mouth. The menus are gradually expanding, but the most gentle regime lasts for about a month.
  2. Chronic pancreatitis, especially in remission, allows for a less restrictive diet. Food is also cooked and steamed, avoiding frying. But they no longer need to be ground as thoroughly as in the acute period. Vegetables, some fruits and berries are added to the diet. Prepare fish with a fat content of up to 8% and lean veal. In this diet they eat for 6 months or more, depending on the speed of recovery of the pancreas.

To all adults and children who have had an attack of pancreatitis at least once, nutritionists recommend a lifelong adherence to a certain diet. That means you can’t undermine pancreatic health again with spicy foods, junk food, suspicious unnatural drinks.

Proper nutrition in adults

The diet of an adult recovering from an acute pancreatic attack (or with chronic pancreatic disorders) is somewhat similar to that of a child. You need to eat often, five or six times a day. Food is prepared exclusively from fresh ingredients. The food is well cooked and crushed to be maximally absorbed in the gastrointestinal tract.

For the convenience of organizing diet meals, experts have developed a lot of different menu options for this week. A balanced diet for pancreatitis looks about the same.

Meals can be changed or repeated several times over seven days. It is recommended to be careful not to duplicate within one day: if fresh cheese was present at breakfast, then it is more rational to add a fruit or vegetable salad to the afternoon snack.

An approximate menu for a week is suggested in the table:

Croutons are added to first courses (soaked in soup) or slices of bread, if the diet already allows it.

You can drink food with decoctions of dried rose hips or currant berries, herbal preparations.

The table lists three meals for the approximate weekly menu. However, we must not forget that you have to eat often. Therefore, between breakfast and lunch, as well as between lunch and dinner, they make small snacks.

Fruit purees, carrot salad with sesame seeds, apples baked with cinnamon, low-fat cottage cheese are suitable for afternoon snacks. Just before dinner is allowed to drink berry jelly, tea or chicory with milk and biscuits, kefir.

The best diet for pancreatitis in children

The diet of children with pancreatitis is basically the same as that of adults. The only thing that gets the most attention when compiling a child’s menu is the carbohydrate content of the food.

Children need this element much less than men and women. Therefore, a child’s menu contains more salads of vegetables, cottage cheese, jelly and baked fruit than side dishes and cereals.

Another difference between a children’s menu and an adult’s is, of course, the amount of food. The child needs half a serving. If an adult gets 200-300 grams of mashed potatoes or vegetable stew for the first time, then the child is given 100-150 grams.

If the child has reactive pancreatitis, then he starves for the first few days. On the third day they give 50-100 grams of slimy soup, weak tea without sugar. One new dish and drink is added every day: liquid vegetable puree and pomegranate soup, mashed rice porridge and jelly, etc.

Dietary food for babies is also suitable for pregnant and breastfeeding mothers. And not only as a treatment for chronic pancreatitis, but also to prevent its occurrence.

Diet recipes

People diagnosed with pancreatitis or gastritis are upset that they have to eat mild foods for a very long time. In fact, a therapeutic diet can be delicious, but also healthy. Permitted products contain a lot of vegetables and even spices, with the help of which the table is changed daily.

Moreover, the taste buds, freed from the imposed large amounts of sugar and salt, begin to feel the true unique taste of natural fructose in apples or the spicy aroma of herbs. So, after supplementing the piggy bank with new diet dishes, the person discovers the whole world of delicious food.

The first meal

The first meals of diet food mainly consist of slimy soups or soups in porridge. Later soups are added to poultry meat (only second cooking).

An important rule for the preparation of all hot dishes for pancreatitis: salt, sprinkle with sesame seeds, season with chopped herbs only at the very end of cooking (even better - before serving). You need to start eating when the food cools down a bit and becomes pleasantly warm.

Slimy soup (oatmeal)

Slimy soup is the healthiest for the pancreas. Cooking is simple:

  • oatmeal grains are ground in a coffee grinder;
  • the obtained crushed cereal (half a cup) is poured with 1, 5 cups of warm water, put on fire;
  • boil the porridge and cook in a steam bath for 15 minutes;
  • insist under the lid for another 10 minutes.

Using the same technology, a slimy rice soup is cooked, which is eventually diluted with chicken broth or meat puree.

Milk noodle soup

No children’s menu is complete without milk noodle soup. This hearty and healthy dish is prepared according to a standard recipe:

  • 3 tbsp. l. homemade noodles are tossed in boiling water, the fire is reduced to medium and the pasta is cooked until half cooked;
  • thrown back into a colander, placed in a cold pot with a thick bottom and topped with milk (1, 5 tbsp. );
  • boil, then cook the noodles for another 5-7 minutes;
  • add 1 tbsp. l. butter and a pinch of salt (if your dietitian allows it).

If you have a slow stove, it is convenient to immediately pour the milk into the noodles and cook at 110 degrees for 10 minutes.

Homemade noodles can be bought at a diet department store or made from wheat flour. In chronic pancreatitis, the use of vermicelli instead of noodles is allowed.

Soups in zucchini and cauliflower porridge

Delicious zucchini and cabbage soup is added to the diet, expanded with new vegetables:

  • cut peeled zucchini (150 g) and disassemble the cauliflower (100 g) into inflorescences;
  • pour water and cook until soft;
  • drain the water, leaving quite a bit, and transfer everything to a blender;
  • add 1 tbsp to the resulting air mixture. l. oil and a pinch of salt;
  • put in a plate, sprinkle with sesame seeds.

If there is no blender, the vegetables are beaten like ordinary mashed potatoes.

This recipe works with any combination of allowed vegetables and spices. For example, you can make zucchini soup with broccoli or carrots by adding chopped parsley to a blender.

Other dishes

Vegetable salads and meat or fish meatballs, puddings, dumplings are good other dishes. Salads are mostly made from cooked vegetables (potatoes, carrots, beets, broccoli, zucchini).

They are seasoned with one tablespoon of oil (flaxseed, olive, refined vegetables). Allowed spices are added to meat products to taste (Provencal herbs, basil, cloves, turmeric, dill, primrose).

Fish pudding

For pudding, take fillets of any allowed fish with a fat content of up to 8% (in a stricter diet - up to 4%):

  • peeled and boneless meat (250 g) is ground in a meat grinder;
  • one slice of stale wheat bread is softened in water and gently squeezed;
  • beat one egg (if the yolk is not yet allowed, then take 2 egg whites);
  • add eggs, 50 ml of milk, a little salt and 1 tbsp. l. butter in minced meat;
  • shake in a blender.

Bake the pudding for 15-20 minutes, putting the mixture in a mold (you can lightly grease it with olive oil) or in a slow cooker.

Chicken souffle

The most delicate meat souffle is prepared in two ways: in a slow cooker (covering the mixture with a piece of foil) or in a preheated oven with the door open (so that the dish does not "fall").

The essence of the recipe is as follows:

  • turn the chicken fillet (250 g) twice in a meat grinder;
  • add 1 protein, 100 ml of milk and ½ tablespoons. l. butter;
  • put in a mold or in a slow pot and bake.

Ground turkey is also good for souffles. In the remission phase of pancreatitis, you can add minced meat before baking and add a little grated cheese to it for a new spicy taste.

Despite the ban on ice cream and chocolate, pancreatitis is also possible to ensure a sweet life. Very tasty and healthy:

  • berry jelly;
  • baked apples with cinnamon;
  • biscuit biscuits with milk and honey;
  • homemade meringue (whipped egg whites with sweetener);
  • fruit mixtures (apples, bananas and pears whisk in a blender, add lemon juice and honey).

If you cut apples, bananas and lightly cooked carrots into cubes, fold them on a baking sheet and dry them a bit in a preheated oven, you will get excellent home-made candied fruit. They are eaten with honey, rinsed with herbal tea or a decoction of black rowan.

Candied fruit is also easy to make from pumpkin: boiled and peeled slices cut into cubes and arrange on a baking sheet slightly oiled with olive oil, put in a preheated oven with the lid open for half an hour. Almost candied fruit can be added to cottage cheese puddings, cheesecakes and semolina milk porridge.

Steamed carrot pudding with apples

You can pamper not only yourself, but also the whole family with a delicious pudding:

  • 6 medium carrots are chopped and sautéed for 10 minutes in a glass of milk diluted with ½ a glass of water;
  • 3 peeled and seedless apples are rubbed on a coarse grater and added to the stewed carrots;
  • after 10 minutes make mashed potatoes (with a blender or crush it);
  • add 2 tbsp. l. butter, 4 tbsp. l. semolina, 2 whipped with protein, 2 tbsp. honey;
  • whisk everything (you can use a mixer) and bake (in the oven or on low heat) for 15 minutes.

Consequences of non-compliance with diet

As you can see, it is easy and pleasant to follow a diet, knowing many healthy homemade recipes. An inflamed pancreas needs a careful attitude towards food. Otherwise, the consequences are inevitable, which will make it really difficult to return to a varied diet.

Failure to follow a diet can cause irreparable damage and lead to serious diseases: jaundice, stomach ulcers, kidney failure, diabetes mellitus, the appearance of cysts and malignant tumors in the pancreas. None of this will happen if you follow the gastroenterologist’s instructions, undergo a preventative checkup, and eat properly.
